Calypso Bean

🖤⚪ A striking heirloom with bold contrast and rich flavor!

The Calypso bean, also called the “Yin Yang” or “Orca” bean, is a true visual standout. Each bean is split cleanly down the middle — one side deep black, the other creamy white — like a perfect yin-yang symbol or a tiny cowhide. Some beans even have speckled or swirled patches where the two colors meet, giving each seed a unique, marbled look.

They’re small, oval, and plump — about the size of a thumbnail — with a smooth, glossy finish. When cooked, Calypso beans hold their shape beautifully and develop a creamy texture with an earthy, nutty flavor that pairs well with soups, stews, and salads.

Bonus: The dried pods pop open with a satisfying crack when ready to harvest, revealing the dramatic black-and-white gems inside — a surprise every time.

🌱 Planting Guide:
Grow your own little black-and-white gems!

📍 Location:
Choose a sunny spot with well-drained soil. Calypso beans are bush-type beans, so they don’t need trellising.

🗓️ When to Plant:

  • Direct sow after your last frost when soil temps are at least 60°F (16°C)

  • Beans don’t like cold, soggy soil — wait for warmth!

🌱 How to Plant:

  • Spacing: 1–1.5" deep, 3–4" apart in rows 18–24" apart

  • Water: Keep soil evenly moist but not soggy until seedlings emerge (in 7–10 days)

🌿 Growing Tips:

  • Don’t over-fertilize — beans make their own nitrogen!

  • Mulch to retain moisture and suppress weeds

  • Avoid handling plants when wet to prevent disease

🫘 Harvest:

  • For dry beans, let pods fully mature on the plant until they’re brown and papery

  • Pick and shell when pods are brittle, then dry beans completely before storing

⏳ Days to Maturity:
80–90 days for dry beans

🧺 Storage Tip:
Store completely dried beans in a cool, dark, airtight container — they can last for years!

Perfect for heirloom lovers, winter pantry fillers, and eye-catching meals!
