Not only is this known as the most expensive pepper in the world, but the Aji Charapita is also one of the most flavorful. Originating from the Peruvian Amazon, this tiny wild chili produces small, round, berry-sized fruits that pack a surprising punch. Each pepper bursts with a bright, citrusy heat that’s perfect for sauces, salsas, and gourmet dishes. Despite their size, these peppers bring a complex fruity aroma that chefs prize for both flavor and exclusivity. 1 kilo can be in the upper $100s and sometimes even $1,000s for the pods!

Heat Level: Around 30,000–50,000 Scoville Heat Units (SHU) — similar to a cayenne pepper, but with a tropical twist.

Planting Guide:

  • Start Indoors: 8–10 weeks before your last frost date. Sow seeds ¼ inch deep in moist, well-draining seed-starting mix.

  • Germination: Can take 14–28 days; warmth (80–85°F) and humidity are key.

  • Transplant: Once seedlings are 6–8 inches tall and nighttime temps stay above 60°F, harden off and move them outdoors into rich, well-drained soil in full sun.

  • Spacing: 18–24 inches apart.

  • Care: Keep soil evenly moist but not soggy; peppers thrive with regular feeding every few weeks.

  • Harvest: Peppers ripen from green to bright yellow-orange and are typically ready 90–120 days from transplant.

Though small, each fruit delivers exceptional heat and flavor — making the Aji Charapita a true treasure for pepper lovers and collectors alike.
