Ayote Green-Fleshed Squash — A traditional Central American heirloom prized for its rich flavor and resilience. The Ayote produces large, round-to-oblong fruits with tough, mottled green rinds that protect the beautifully vibrant green flesh within. The flesh is dense, smooth, and slightly sweet with nutty undertones—excellent for roasting, soups, or mashing. When cooked, it develops a creamy texture similar to pumpkin or kabocha but with a distinctive earthy sweetness. Highly productive and adaptable, this squash stores well and thrives in warm climates.

Soil: Prefers rich, well-drained soil with plenty of organic matter. Ideal pH: 6.0–6.8.

Planting Time: Sow outdoors after the danger of frost has passed and the soil has warmed to at least 70°F.
